Alison’s San Choy Bau
I am on a high protein low carb eating plan at the moment which means chicken, steak and tuna every day. You really need to change things up every now and then because there is nothing worse than struggling through your meals.My wife cooks me this as a treat and I must say it is my favourite way to have chicken. If you are not on a low carb eating plan you can have it with some rice. 1 tablespoon of oil 2 red chillies, chopped 500g chicken mince 2 tablespoons fish sauce 2 tablespoons of lime juice 1 tablespoon of tamari (soy sauce) cup of coriander chopped cup of mint chopped Iceberg lettuce Heat oil in pan, add chillies and chicken mince. Cook chicken mince until there is no pinkbits (lightly browned). Then add fish sauce, lime juice, tamari and stir for a minute. Remove from the heat and stir in the fresh coriander and mint. Spoon the mixture into the lettuce cups and roll up – enjoy.
